My 3-Day Juice Cleanse: Part I
I did it! I completed my first 3-day juice cleanse. I must say this… I am super-grateful to my friends and husband for joining me. Their support, along with my mom who took over cooking my kid’s meals, helped me tremendously. There were many ups and downs. The weekend I chose to start the juice cleanse, there were 2 major events taking place. First, my daughter was graduating from her gardening program. Then I was scheduled to go to my Food Therapy class at the Natural Gourmet Institute… in my opinion, the best cooking school! Ay ya yai… this was not going to be easy. Check out a few snippets from my diary:
4/13/12: Pre-Juice Cleanse
I’m a little nervous but I’m very excited. My thoughts are consumed by what I should make for dinner. I’m feeling like we should celebrate “the last supper”. I knew what I was to eat had to be balanced, equal parts proteins/grains/good fats/vegetables. When I got to the supermarket, I found out the wild-caught shrimp are on sale… Woo Hoo! I decide to make the shrimp cooked in coconut oil accompanied by spices, peppers, tomatoes, onions and garlic, brown rice and an avocado salad. YUM! This meal might have made the next 3 days more difficult. After dinner, I join my friends to mentally, physically and spiritually prepare for the cleanse. My stress disappears and an overwhelming sense of anticipation ensues.
4/14/12: Day 1 Juice Cleanse
I surprisingly got through the morning without my coffee, food and getting on facebook, twitter, etc… in that order. I start off my day celebrating at my daughter’s gardening program graduation, which includes enjoying the fruits of their labor. I had to reject a radish and lettuce salad dressed in oil and vinegar infused with the herbs the students grew. Fortunately we were able to take the growing plant home so that I could continue to care for it and more importantly eat it once I was off the cleanse. Being at the farm also means, I go food shopping… not easy!
When I arrive to class at The Natural Gourmet Institute, I am welcomed by the smell of fresh bread at the teaching kitchen next door. Oddly, I am not hungry and feel relieved to be reunited with some of my classmates who are also on the juice cleanse. I need them to get through the day. As I head back, I started to get a headache and by the time I got home, it was unbearable, then the nausea kicked in (It must’ve the beet juice. I hate beets). Oh Gosh… this is not good. Fortunately, I also felt weak and sleepy and so it wasn’t long before I knocked out.
